What is Pure Roast Coffee?
Just like with cooking, the flavor of coffee can be enhanced by adding or blending other ingredients during the roasting process. Here’s a look at different roasting types:
- Pure Roast Coffee: This involves roasting coffee beans using a machine at the right temperature without adding any flavors or additives.
- Flavored Roast Coffee: During roasting, some ingredients like butter or salt are added, but the primary flavor remains coffee.
- Blended Roast Coffee: This includes both added flavors and a mix of other grains, like corn or soybeans. Here, coffee is no longer the primary flavor.

Phin Brewed Pure Roast Coffee
Phin brewing is a traditional, manual coffee brewing method in Vietnam, using a special filter called a “phin” made of aluminum.
Simply put, phin brewed pure roast coffee is coffee that’s roasted purely, without any added flavors, and brewed using a phin filter. This method produces a strong, pure coffee flavor.
Each region has its unique way of combining phin-brewed coffee with local culture to enhance the taste. In Huế, there’s salted coffee; in Saigon, iced milk coffee and “bạc xỉu”; and in Hanoi, there’s black coffee or brown coffee with milk.

Making a phin-brewed cup of pure roast coffee is quite simple. Here’s VCU’s guide:
Choosing the Coffee
There are many types of pure roast coffee. For the best flavor, choose robusta coffee, like Robusta Honey or Robusta Natural, which offers a rich bitterness, sweet aftertaste, and intense aroma. Depending on your preference, select a medium or medium-dark roast.

Phin Brewing Instructions
- Phin Size: ~25g; a size 7 aluminum phin is optimal.
- Preparation:
- Phin set: clean, odor-free, pre-rinsed with hot water.
- Pouring kettle: ideal with a flow diameter of 0.2 cm.
- Scale: to measure coffee and water (or a graduated pitcher).
- Timer: to track steeping and extraction time.
- Water temperature tool (or wait 1-2 minutes after boiling in an electric kettle to reach 93-96°C).
Steps:
- Measure 25g of coffee into the phin (lightly shake to level the surface, ensuring the base of the phin is clean).
- First pour: 40-50g of water at 93-96°C, poured in a spiral from center to edges, with a steady flow of 0.2 cm in diameter, around 5 cm above the phin.
- Steep for 1’30” – 2” with the timer set.
- Second pour: 50-60g of remaining water, using the same pouring technique as before.
- Total extraction time for both pours should be around 6-7 minutes.
The ideal coffee-to-water ratio for phin brewing is 1:4 (1 part coffee to 4 parts water), which can be adjusted slightly for business purposes.
Phin Brewing Tips for Pure Roast Coffee
To make a perfect cup of phin-brewed pure roast coffee, keep in mind:
- Use water at 93-96°C, not 100°C, as excessive heat can burn the coffee. Also, ensure the water is pure without any other scents.
- Ensure the coffee grind is suitable for phin brewing to avoid a quick, weak brew.
- Clean the phin thoroughly after each use to keep it free from residues that may alter the coffee’s taste.
