Unwashed processing, also known as Natural or Dry , is a natural coffee processing method that utilizes sunlight to dry the coffee beans.
The advantages of this method are that it helps the coffee have a sweet taste, low acidity, and a strong aroma.
The disadvantage is that it depends on weather conditions and requires a long drying time.
Unwashed Robusta Clean coffee processing steps
Step 1: Harvest the coffee cherries.
Step 2: Remove immature beans, leaves, branches, and impurities from the harvested cherries.
Step 3: Dry under sunlight for 25-30 days to reduce the moisture content of the coffee beans to 12-13%.
Step 4: The dried coffee cherries are hulled by machine to remove the outer skin and dry parchment, resulting in the finished green coffee beans.
Step 5: Store the green coffee beans in sacks, place them in a dry, cool area, and wait until it’s time for roasting.
