About Fine Robusta

Fine Robusta Vietnam green coffee beans are specialty coffee grown under natural conditions with special care, harvesting, and processing methods. When tasted, they have a unique flavor and score 80 points or higher (on a 100-point scale) according to the standards and evaluation process of the Specialty Coffee Association (SCA), the Coffee Quality Institute (CQI), or their authorized agents (ASTs).

In the past, people sought coffee simply because it contained caffeine, which kept them alert. Coffee businesses processed coffee to save costs and maximize profits. However, recently, people desire to enjoy a perfect cup of coffee in both aroma and taste, meaning quality has become the primary concern.

How is Fine Robusta Scored?

Green Coffee Bean Evaluation

Ensuring uniform bean quality with no defects affecting the coffee’s flavor. This criterion evaluates two groups of defects:

  • Primary defects: these are serious defects commonly found in green Robusta coffee beans. Specifically: Full black (completely black beans), Foreign matter (foreign objects in the coffee sample), Fungus or Mold (moldy or fungal coffee), Severe insect damage (severely insect-damaged beans).
  • Secondary defects: minor or partial bean defects such as Broken, Partial black, Partial insect damage.
  • Another concept for evaluating green coffee bean defects is Full defect, referring to beans with 1-5 Primary defects or 3-10 Secondary defects.

Roasted Bean Scoring (Cupping)

  • Aftertaste: Brackish or Savory, with Savory aftertaste being rated higher.
  • Body: Robusta is always highly rated for its thick body, so the form does not include a score for the body.
  • Salt/Acid Ratio (scoring 1-6): CQI considers that Robusta contains more potassium, which creates a certain saltiness; thus, this criterion reflects reality. Fine Ro usually has a higher acidity than saltiness. The lower the perceived saltiness, the higher the Salt score. The total score for Salt/Acid Ratio is 10.
  • Bitter/Sweet Ratio (scoring 1-6): The total score does not exceed 10, with higher scores given for less bitterness.
  • Mouthfeel: evaluated based on the level of Rough (unpleasant roughness) and Smooth (smoothness).
  • Uniform cups and Clean cups: 10 points if all 5 cupping cups have the same flavor.

Cupping Results:

  • 70-80 points: Premium Robusta.
  • 80-90 points: Fine Robusta.
  • 90 points and above: Very Fine Robusta.
