What is freeze-drying technology?

Freeze-drying technology, also known as cold drying, is a technique that dehydrates products through the sublimation of water under low pressure and temperature. Typically, coffee used in freeze-drying technology must have a high ripeness rate and undergo thorough preliminary processing, such as Robusta Honey or Arabica Full-washed.

Freeze-dried coffee is pure coffee in an instant form that uses advanced technology to dehydrate and concentrate its essence. In other words, after the freeze-drying process, this mixture will take the form of coffee essence crystals while retaining the original flavor of the coffee.

Freeze-drying coffee process

Step 1: Roasting coffee

Coffee is meticulously selected and cleaned, ensuring it meets standards, removing dust and impurities. It is then heated appropriately to transform green coffee beans into roasted coffee beans. Depending on the customer’s request, it can be roasted to Medium, Medium-Dark, or Dark… After being roasted with the appropriate profile, the coffee is ground into powder and moved to step 2.

Step 2: Extraction

The raw material is coffee powder. By pumping a certain amount of hot water into the coffee powder, the coffee is extracted. This step is similar to brewing coffee with a filter or machine.

Step 3: Concentration

The coffee extract after extraction has a brix degree of about 10%. At this stage, most of the water is removed, bringing the brix degree to about 50%.

Step 4: Freezing

The concentrated extract is placed in a freezing system, with temperatures ranging from -30°C to -50°C. To best preserve it, the frozen extract is frozen on a continuous IQF conveyor system.

Step 5: Creating freeze-dried coffee granules

After freezing, the product goes through a granulation process using the ice crystals. The coffee ice blocks are ground into small granules.

Step 6: Freeze-drying

After granulation, the coffee is kept frozen at -30°C to -50°C, placed in trays, and moved to the freeze-drying chamber.

Instant freeze-dried coffee is highly hygroscopic, so packaging and storage are crucial.
