What is instant coffee?

Instant coffee is a type of coffee that dissolves easily in water in a short and quick time. Its rapid dissolving capability is due to the processing method, which involves extracting and retaining the soluble components from coffee beans. Non-soluble components or impurities are removed to produce a clean, pure instant coffee that preserves the delicate, natural flavor of the coffee.

Instant coffee is divided into two types: freeze instant coffee and spray-dried instant coffee. In this article, we will focus on freeze-dried coffee.

Freeze-drying, also known as cryodesiccation or lyophilization, is a process that involves drying by freezing, known as freeze drying. In this process, coffee is freeze-dried to dehydrate and concentrate its essence. The resulting product after the freeze-drying process is in the form of core coffee crystals.

Freeze Drying is a low-temperature dehydration process that includes freezing the product, reducing the pressure, and then removing the ice by sublimation. This is in contrast to dehydration by most conventional methods, which involve evaporating water by heat.

Freeze-Dried Instant Coffee Production Process

The production process of freeze-dried instant coffee involves five main steps:

  1. Extraction: The raw material is coffee powder, which is extracted by pumping hot water through the coffee powder. This step is similar to brewing with a phin filter or espresso machine.
  2. Concentration: The coffee extract, after extraction, has a Brix level of around 10%. In this step, most of the water is removed, bringing the Brix level to around 50%.
  3. Freezing: The concentrated extract is sent to the freezing system, with temperatures ranging from -30°C to -50°C. To ensure the best preservation, the frozen extract is processed on a continuous IQF (Individual Quick Freezing) conveyor system.
  4. Creating freeze-dried coffee granules: After freezing, the product goes through the granulation stage from the ice crystals. The coffee ice blocks are ground into smaller pieces and formed into granules.
  5. Freeze-drying: After granulation, the coffee is kept frozen at temperatures between -30°C and -50°C, and then loaded into trays and placed in the freeze-drying chamber.

Freeze-dried instant coffee is a product that easily absorbs moisture, so packaging and storage are crucial.

Evaluation of Freeze-Dried Instant Coffee

The assessment of freeze dried instant coffee may vary depending on the objectives and needs of each unit. According to objective evaluations from many customers, freeze-dried coffee offers excellent quality due to its ability to preserve the original flavor, balance, color, and solubility.

Another factor is cost. The price of freeze instant coffee is generally higher than other instant coffee products. This is due to the quality being ensured to meet standards, the stringent storage process, and consumer preferences. This is also why freeze-dried coffee has higher consumption rates in European and American markets.
